English muffins 1

To me, an English muffin means Eggs Benedict. (Or rather it used to mean Eggs Royale and these days it means Eggs Florentine).


Like the fiddly hollandaise, it is reserved for a weekend brunch at a fancy cafe. I don’t cook anything more complicated than a pancake before at least two coffees!


But it turns out English muffins are super easy to make! And since the first prove can be done overnight, they’ll be ready in time for brunch! (I managed to counter this speedy cheat by being so paranoid about not cooking them through that I cooked them ridiculously slowly bit that’s just me!).


We enjoyed them on Christmas morning topped with mushrooms and eggs. Then more with jam and honey. Of course all washed down with a few glasses of bucks fizz!


You won't believe how easy English muffins are!


I made these without a kitchen, using just a fork, a mixing bowl, scales, measuring spoons, a frying pan. Chances are you already have all or most of the ingredients in your cupboard so what are you waiting for? If I can do it, you definitely can!


I followed this recipe and it worked wonderfully.
