French Toast 4 ways 1

I can vividly remember the first time I had french toast. We were in the disgusting kitchen of my miserable second year student house and we were following a YouTube tutorial on how to make ‘egg bread’.

It wasn’t the best or most glamorous eggy bread I’ve had but it got me hooked and French Toast became my favourite breakfast.

Nakhon Sawan sorely lacks somewhere to get a good Western breakfast. We’re more than happy eating a rice dish for brekkie but we like to treat ourselves on a Sunday.

Getting bored of undercooked eggs on sweet bread from our local coffee shop, we decided we needed to take matters into our own hands.

French Toast with bacon and maple and syrup was my absolute favourite breakfast. But since I stopped eating meat (and don’t have access to maple syrup) I wasn’t sure what to top the toast with.

Enter the French Toast Challenge.

Every Sunday for a month we had French toast in a different form. We took it in turns to plan and make brekkie whilst the other person stayed in bed! It could be sweet or savoury so long as it involved that delicious eggy bread and no meat!

Here’s what we made…

Fruit and Nut French Toast

This was inspired by Rustic and Blue’s amazing French Toast sandwich.

After soaking the bread in eggs, it was dipped in shredded coconut before frying. Then topped with grapes, golden kiwi, passionfruit, pistachios and sunflower kernels.

Chocolate Banana French Toast

Quite frankly a winning combination any day of the week! This French Toast was smothered in a homemade chocolate spread of banana, cocoa powder, dates and avocado and was then topped with sultanas and whole nuts. Chewy, munchy, sweetness.

Peanut Butter French Toast Rolls

You know when you are inspired by a picture on Pinterest and what you make in no way resembles that? Yeah. BUT these were delicious – next time I’m adding jam!

French Toast with beans, eggs, garlic and shrooms.

So much garlic on our only savoury brekkie. Why not just use french toast as an alternative to regular bread?

You really can’t go far wrong with eggs, garlic and mushrooms, which towered atop bread that had been spread with slow cooked baked beans. Taste of home.
